Red beets salad

Ingredients (serving 4) –
6 medium size red beets
1 table spoon pumpkin seeds
1 table spoon dried cranberries
2 table spoon oat bran
2 table spoon wheat bran

Preparation –
Boil the red beets till soft in a boiling water (It can take up to 30 minutes or more).
To check if the beets are cooked, just poke them with a knife, you should be able to go through without forcing).
Remove them from the water.
Once cold, slice them and mix with the cranberries, oat and wheat bran and pumpkin seeds.

Seasoning –
Olive oil, balsamic vinegar, salt and pepper.
