Cheese made in the South of Paris. When presented this cheese last Friday, I had a chance to taste it in the store... and I end up buying some. What a taste in the mouth! 

While eating with obviously red wine and bread, add in your plate figues or raisins, the sugary/salty mix is a delight!

Available at Les Amis du fromage. Extraordinaire cheese store in Vancouver with a wonderful and knowledgeable staff!

In this video (in French), the person in charge of the farm explain not only the cheese making but also the approach of the farm in restoring cow and goat herds in order to have a better and healthier soil.
